In March 2017 whilst working on his annual wine project at the farm Dagbreek in the breedekloof Valley, Thys met Mathilda, a Junior winemaker working at the Du Toits Kloof Winery. Her father , a farmer on the farm Tweedal in the Voorbat Valley in the Klein Karoo had sent her a ton of Sangiovese grapes from his farm.
Together, Mathilda and Thys crafted this product. It is slightly acidic with soft tannins.
Sangiovese ("blood of Jupiter") is the most popular grape cultivar in Italy. Whilst mostly found in the Tuscany region, it has grown as far south as Calabria and Sicily. It is central of the production Chianti, Carmignano and Vino Noble. In South Africa it is known as Sangiovese and is grown mostly in the drier climatic zones such as the Klein Karoo
